Coconut Lemon Slice

Amanda Winks has shared a recipe from her personal collection, affectionately known as the Pink Cake. It’s a simple coconut lemon slice that’s easy to make and perfect to enjoy with others.

Coconut Lemon Slice

1 cup self-raising flour

1 cup coconut

¾ cup caster sugar

½ cup milk

Pinch of salt

125g (4oz) margarine or butter (melted)

1 egg (lightly beaten)

In a bowl combine flour, salt, sugar, and coconut – don’t mix yet!

Make a well in centre, add milk, egg, melted butter before starting to stir

Pour into greased and floured (or baking paper lined) tin (I use a 20×20 square tin)

Bake in pre-heated oven at 190 degrees for 20 – 25 minutes

While still warm ice with lemon icing and sprinkle with coconut
