Spring Recipe
Below is one of our CEO Amanda’s favourite recipe, Bill Granger’s dark chocolate banana bread. It’s a well-loved lunchbox treat in her family home and a great way to use the overripe bananas lingering in the fruit bowl at the end of the week.
Ingredients:
2 x cups plain flour
2 x teaspoons baking powder
1 x cup caster sugar
3 – 4 mashed bananas
125g butter melted
2 x eggs lightly beaten
1 x tsp vanilla extract
1 x cup dark choc chips
Icing sugar to dust
Method:
Preheat oven to 180 degrees
Grease large loaf pan (or line with baking paper)
Sift flour and baking powder into a bowl (I do not bother with sifting!!)
Add sugar
In a separate bowl combine bananas, butter, eggs, vanilla, and choc chips
Add to dry ingredients and stir until just combined
Bake for 1 – 1 and ¼ hours (I sometimes cover with foil for last 15 minutes if browning too quickly)
